Makes 6-8 popovers

These are super festive, delicious and always impressive!


  • 1 cup of flour (I used whole wheat)
  • 1 cup of milk ( room temp)
  • 2 eggs ( room temp)
  • 6-8 custard molds
  • 2 tbsp of avocado oil
  • Optional: truffle salt, everything but the bagel seasoning


Preheat your oven at 450F. Grease  your molds all the way up with the avocado oil and place them in the oven for 2 minutes so they heat up a bit. This will help the popovers to rise.

Combine the milk, eggs and flour in the food processor and pulse until smooth. Pour some batter halfway up the molds and return to the oven for 20-30 minutes until puffed up and golden brown. If you want to add ouse herbs or truffle salt or some extra flavor, you would do it now.

They are best eaten warm right out of the oven with butter and a bit of salt, but they keep for a bit, just reheat them.
