Makes 10-12 crêpes

My kids love crêpes so I make then quite often. I usually cook a stack and keep them in the fridge so they can easily reheat one when they crave a little snack. I swapped the flour this time for oat flour, trying to get a bit more nutrients in there. apparently everyone loved them and did not comment that it was much different than usual...

Ingredients

  • 1 cup of oat flour (place 1 cup of oats in a food processor and turn on until it becomes super fine oat flour)
  • 1 1/2 cup of milk (I used almond milk)
  • 2 eggs
  • 2 tbsp of maple syrup
  • 1 tsp of vanilla extract (or powder)
  • 1 pinch of salt
  • Toppings: nut butter, sliced banans, strawberries, powder sugar, greek yogurt, jam,....

Directions

Place the oat flour, eggs, milk, salt, vanilla and maple syrup in blender and process tuna you get s smooth batter.

Heat up a medium size pan ( mine is 6inches) with some coconut toil or ghee and cook 1/4 cup of the batter at a time trying to disperse all over by tilting gently the pan in all directions. After 45-60 seconds flip the crêpe and cook on the other side for another 30-45 seconds.

Transfer to a plate and repeat until you've used all the batter.

Use all kind of delicious toppings and enjoy!
