Makes 1 cake

This is so easy to make and really light and fluffy. I have had it for dessert with whipped cream and fro breakfast with nut butter. You can also slice it and freeze it if you have extra.


  • 2 1/12 cup of almond flour
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 2 eggs
  • 1/4 cup of olive oil
  • 1/2 cup of maple syrup
  • Juice and zest from 2 lemons


Preheat the oven at 350F. Grease and line an 8 inch pan.

Combine the dry ingredients in a a blow and give it a whisk.

In a large bowl, mix the eggs, olive oil, maple syrup, lemon juice and zest using a hand mixer. Slowly add in the dry ingredients and stir until the batter is smooth.

Pour it into the baking pan and bake fro 25-30 minutes or until a toothpick comes out clean.
