Orzo pesto pasta with peas and arugula

I am always on the search for easy and new recipes full of nutrients that my kids will enjoy and ask for seconds. Whenever it involves pasta I know I have the advantage, and here they really loved it, so it is a win!

Ingredients

  • 2 cups of orzo
  • 3 1/2 cups of stock
  • 2 green onions, finely chopped
  • 2-3 tbs pof olive oil
  • 1/3 cup of pesto sauce (there are a lot of store bought amazing options)
  • 1 cup of frozen peas
  • 2-3 handful of arugula
  • 1/2 cup of cheese (I used a mix of mozzarella and feta)

Directions

In a large pan sauté the onions with the olive oil for a couple of minutes until fragrant. Add the orzo pasta and stir to even coat it all together. Add 3 cups of broth (reserve the extra 1/2 cup in case it gets too dry), the pesto sauce then bring to a boil and simmer for 5 minutes, add the peas and cook 2 more minutes. You want the pasta to be just undercooked. Add the arugula and mix together ( like I said if you see that it is really thick and needs more water add a couple of more traps at a time).

Taste and adjust seasoning to your liking.

Sprinkle the cheese and broil for 5 minutes until the cheese gets golden and bubbly.

If you need something a little bit more, you could easily add sausages, meatballs, cooked chicken, chickpeas,....
