One instagram foodie posted something similar the other day and I thought it was a brilliant way to make the artichokes!! Prepping them is always a bit of a pain but so worth it!

Ingredients

  • 4 artichokes
  • 1/4 cup of olive oil
  • 2 tsp of Italian seasoning
  • 2 tbsp of garlic granules
  • Salt and pepper
  • Sauce: 1/4 cup of greek yogurt, 1/4 cup of mayo/ 2 tbsp of apple cider vinegar, 1 tsp of maple syrup, 1/4 cup of fresh herbs, salt and pepper

Directions

Preheat your oven at 400F.

Rinse the artichokes and pat dry them. Cut the stem and slice the tip as well. It will look like you are left with only half of it but that is ok. Slice them in 2 lengthwise. With a teaspoon remove all the little hair in the middle as well as the small leaves in the center.

Rinse them again to get rid of all the hair (you'll see what  I mean, they're a pain to remove, they tend to stick, so be patient here).

Line a baking sheet with foil. Brush the artichokes with the olive and season with the herbs and garlic granules in the center, as well as with some salt and pepper. Flip them over and brush with more oil and add salt and pepper. Bake them for 10 minutes uncovered.

Cover with foil and bake them for another 15-18 minutes.

Meanwhile make the sauce by combining all the ingredients in a blender until super smooth.

Remove the artichokes from the oven and get a knife through the center and if it is soft and goes easily in, then they are cooked.

Let them cool for a little while and enjoy with the sauce.

They both keep for a few days in the fridge and taste delicious at room temperature the following day.
