Makes 10-12 muffins

I think that baking with pears is underrated..... They have such a great texture and flavor! I paired 1/2 of them with some chocolate chips and the other half with walnuts and I really love both combinations.

Ingredients

  • 1 1/2 cup of flour
  • 3 bananas
  • 2 pears (relatively soft)
  • 1 cup of coconut sugar
  • 1/2 tsp of baking soda
  • 1 tsp of baking powder
  • 3 tsp of coconut oil, melted
  • 1/4 cup of nut milk (I used almond milk)
  • 1 tbs of vanilla extract
  • Optional: 1/2 cup of walnuts and or 1/2 cup of chocolate chips

Directions

Preheat the oven at 350 and line up a muffin pan with 10-12 muffin cases (depending on the size, you can make 12 small ones or 10 medium ones).

Combine all the dry ingredients in a medium bowl. Peel and cut the pears into small pieces and reserve on the side.

Mash the bananas and mix with the coconut oil, milk and vanilla. Toss in the dry ingredients (it will feel really dry but that is ok, the pears will add back moisture when baking).

Add in the pears and gently fold in as well as walnuts and or chocolate chips if using (try no tot over mix it).

Scoop the batter in the muffins cases and bake for 20-25 minutes or until a toothpick comes out clean.

Let them cool and enjoy a such or add a dollop of nut butter on top for extra goodness.
