This is by far my husband's favorite dessert, alongside the pine nuts one and the 3 kings galette. No surprise there since they all have a frangipane base and are quite similar. I made this for him and wanted to share for other frangipane pear lovers out there....

Ingredients

  • 1 pie dough (store bought, thawed)
  • 1 1/2 stick of softened butter
  • 3/4 cup of organic cane sugar
  • 1 cup of ground almonds
  • 2 eggs
  • 1/2 tsp of almond extract
  • 1 tsp of vanilla extract
  • 1 pinch of salt
  • 2 cans of poached pears

Directions

Preheat the oven at 350F and line the dough in a pie mold.

With a electric mixer, combine the butter, sugar, eggs, both extracts until smooth. Add in the almond flour, salt and gently fold it together.

Spoon the mix in the pie dough and nicely even the surface. Scatter the pears round side up, gently pressing down so they get halfway in the mix.

Bake for 35-40 minutes until set and cooked through. You want the center to still move slightly but a toothpick should come out cleaned when inserted.

Enjoy with some whipped cream and/or vanilla ice cream.
