Penne with spinach, tomatoes and ground beef

This is an easy put together dinner, that can be adapted with turkey or chicken if you don't eat beef. Kale can replace spinach, peas or broccoli can also be added for extra veggies. More importantly, it takes less than 15 minutes from start to finish!!


  • 1 package of penne pasta
  • 1lb of ground beef
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 pinch of chili flakes
  • 2 bunches of baby spinach
  • 1 15oz can of crushed tomatoes
  • Salt and pepper to taste
  • A couple of tsp of ricotta (optional but delicious)
  • Parmesan and chopped basil for serving


Cook the pasta according to package instruction.

Meanwhile, sauté the shallot, garlic and chili flakes with 2 tbsp of avocado oil fro 3-5 min. Add the ground beef and break into small pieces until completely cooked through.

Add the tomatoes, spinach, toss and season to taste. Transfer to a platter and spoon some ricotta here and there and some fresh chopped basil. Serve, sprinkle some parmesan and enjoy!
