This is a super easy way to make fish!! You can prep it all ahead of time and keep it in fridge until you are ready to cook it! You can use different kind of fish here such as salmon, halibut, cod,... Cooking time will depend mostly on the thickness of the fish. I would say for 1.5to 2 inches, it should take around 20 minutes, until fish is flaky.

Ingredients

  • 5 6-8 oz pieces of fish ( I am using a mix of salmon and halibut today)
  • 1 zucchini, washed and sliced ( I have done it with asparagus, mushrooms and green beans as well)
  • 1/2 cup of pesto sauce (store bought works great as well)
  • 1 cu of cherry tomatoes, cut into 2
  • Salt and pepper
  • baking paper and foil

Directions

Preheat the oven at 400F.

Place the baking paper on top of the foil. Put a few zucchini slices and 1 piece of fish on top and spread 1 tbsp of pesto sauce. Add a couple tomatoes, some salt and pepper.  Close the package starting the baking paper first then the foil, which will hold it together.

Repeat until all packages are done.

Cook for 20-25 minutes until fish is cooked through. This is perfect for a dinner party as you can prepare all the packages in advance and just put them in the oven before dinner!!!
