Pesto flank steak

These are a fun Italian version of traditional flank steak. You can use good quality store bought pesto, just roll them up and cook them!
Lay the steaks flat and spread 1 tbsp of the pesto sauce on each steak. Roll them up and secure with string or a toothpick and sprinkle with salt and pepper.
Cook them with 1 tbsp of olive oil until brown on each side, just for a couple of minutes!
I served these with mash potatoes and it was just divine!
