Pesto meatballs and orzo pasta

Who does not love a one dish dinner?? Less cleaning, less hands on but still super delicious and flavorful!! I am using good quality store bought pesto sauce as a shortcut, but feel free to check the pesto recipes I have on the blog as well, I have a few good ones!

Ingredients

  • 1lb of ground beef (turkey and chicken both work as well)
  • 1 cup of pesto sauce
  • 1 medium yellow onion, peeled and minced
  • 2 cups of dried orzo
  • 2 cups of veggie stock
  • 1 tsp of each salt and pepper
  • 4 tbsp of olive oil
  • Toppings: toasted pine nuts, fresh basil, grated parmesan, burrata

Directions

Combine the meat with 1/4 cup of pesto sauce and half of the salt and pepper and form the meatballs, you should have 10-12 of them.

Cook them in a large pan with 2 tbsp of olive oil until golden brown. Transfer to a plate and reserve.

Add the remming 2 tbsp of oil and sauté the onion for 30 seconds, add in the orzo stir and then add the broth in with 1/2 cup of the pesto sauce. Bring to a boil and when it does add the meatballs back in and simmer covered until the pasta are cooked, 8-10 minutes.

When ready spoon the rest of the pesto on top, sprinkle some parmesan cheese, toasted pine nuts, fresh basil and add the burrata (if using some).
