If you like coconut an pineapple together, this is bound to become your favorite pancakes!! They are so yummy and feels like a summer beach vacation on a plate!

Ingredients

  • 1/2 cup of coconut flour
  • 1/4 cup of flour
  • 4 eggs
  • 1/4 cup of pineapple, cut in small cubes
  • 3/4 cup of coconut milk (from a carton not the canned one, or any other milk works as well)
  • 2 tbsp of coconut sugar
  • 1/4 cup of nut butter
  • 1 tbsp of baking powder
  • 1/4 tsp of salt
  • Toppings: toasted coconut flakes, fresh pineapple, maple syrup

Directions

Beat the eggs, milk, nut butter and pineapple together. Add the flours, baking powder, salt and sugar and give it another whisk until smooth.

Heat up some coconut oil in a pan and when ready using 1/4 cup measure scoop in the batter. Cook for 2-3 minutes on each side until golden brown and cooked through. Repeat with the rest of the batter.

Transfer to a plate, I like making a tower out of them and add some fresh pineapple on top with coconut flakes, drizzle some maple syrup and enjoy!
