Pineapple and cucumber salsa

Makes 3 cups
I made this for a fish recipe that I was testing out the other day and it was so delicious! Kids were also eating it with chips, I would even add this on yogurt for breakfast or something!!!
Finely cut and chop all the ingredients. I like it when it is really small pieces. Toss and add the lime zest and juice as well as the olive oil some salt and pepper.
Leave to rest at room temperature for a couple of minutes so all the flavors can really nicely combine!
Enjoy right away or keep in the fridge for a few days!
