Pineapple Basil Chicken with Roasted Cashews

  • 1 lb chicken breast, cut into chunks and seasoned with salt and pepper
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 1/2 cup of fresh pineapple, cut in small cubes
  • 1 cup of chopped roasted cashews
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 2 cup fresh basil
  • Salt and pepper to taste
  • 2 tbsp oil


Combine soy sauce an oyster sauce and chicken and let it marinate for 30 minutes (the longer the tastier).

In a large pan, heat oil to medium.

Add the shallot, along with the garlic. When onions become translucent, add the chicken. Cook until chicken is done. Add the basil, cashews and pineapple and stir.

Serve it with rice, my kids love it when I prepare coconut rice and serve it together.
