This is the kind of snack I make when it is soup night. These are super easy to assemble, they bake in less than 15 minutes and are always a success with my husband and kiddos! I use good quality store bought puff pastry here, biscuit dough could work as well of crescent dough....

Preheat the oven t 425F and line up a baking sheet.
Roll out the puff pastry, spread the pesto sauce and sprinkle the cheese and pepperoni. Roll the dough, not too tight but not too loose, just so it look compact without squishing it. Cut into 8 pieces and place on the baking sheet. I drizzled some olive oil for extra flavor but this is optional.
Bake for 12-15 minutes or until flaky and golden brown. They are best when enjoyed still warm but keep for a little while in the fridge (they will not be as crunchy though when refrigerated, but you can quickly reheat them for a few minutes).
