Makes 3 medium pizzas

I always forget how easy and so much better it is to make pizza dough from scratch!!! I did with Harry, no machine or anything and we had so much fun doing it!

Ingredients

  • 2 cups of all purpose flour
  • 1 packet of instant yeast
  • 1 tsp of salt
  • 2/3 cup of warm water
  • 1 tbsp of olive oil
  • 1 tbsp of sugar
  • Toppings: cheese, pesto sauce, fresh tomatoes, sliced Brussels sprouts, onions, spinach, fennel seeds, Italian seasoning

Directions

In a medium bowl, combine together the flour, yeast and salt. Add the water, olive oil and sugar and mix with a wooden spoon until combined. Flour your hands and knead for 5-10 minutes util dough is soft. Transfer to a greased bowl and cover with a towel and leave to rise for at least 30 min or until it doubled in size.

Meanwhile prepare all your toppings and preheat your oven at 450-500F.

Once the dough is ready, cut it in 3 or 4 and roll to your desired shape. I like mine super thin but I don't really care about the shape.

Place the dough on a lined baking sheet before adding any topping.

For my pizza which was amazing I spread some pesto sauce, then added a couple of cherry tomatoes, dairy free cheese, spinach, thinly sliced Brussels sports, purple onions, fennel seeds, Italian seasoning and chili oil.... I have to say this probably was one of the best pizza I ever had...

My boys went more traditional; tomatoes, cheese and onions and one added prosciutto....

The beauty here is that you can add whatever you want.

Bake in a REALLY hot oven for 12-15 minutes, rotating it halfway. Slice and enjoy!
