I have always loved pound cakes but have never been over excited about the amount of butter and sugar traditionally used in one... I have been experimenting with this recipe for a while and finally came up with a good one!!!
Preheat the oven at 350F.
Combine flour, salt and baking powder in a medium bowl.
With a hand mixer (or stand up mixer works) mix the sugar with eggs, milk, olive oil, yogurt and vanilla extract.
Slowly incorporate the dry ingredients into the wet mix until just combined ( do not over mix it).
Transfer into a greased bread loaf pan and bake for 45-50 minutes or until a toothpick comes out clean.
Leave it to cool for 10 minutes before removing from pan! My kids have had it for snack everyday and I enjoyed it also for breakfast with nut butter and/or jam.... So Yummy!
