Eggs are usually my go to recipes for week-end bunches... I went the Italian way today using prosciutto and asparagus and complimented it with a arugula salad. I always add a big plate of crudités for those, aka my kids, who are not huge fans of salads but still need to eat their veggies!


  • 8 eggs
  • 6 asparagus, washed, end trimmed and cut
  • 1 cup or prosciutto, roughly chopped
  • 1 shallot, chopped
  • 1 tsp of fresh thyme, chopped
  • Salt and pepper
  • Olive oil
  • Parmesan cheese to garsnish


Preheat the oven at 350F.

Sauté the shallot with the asparagus for a couple of minutes. Meanwhile beat the eggs with the thyme, 1/2 tsp of salt and 1/4 tsp of pepper.

Add the prosciutto to the asparagus and make sure it is spread throughout the pan before you pour the egg mixture over .

Cook the eggs for a few minutes on the stove and finish it in the oven for 10-15 minutes until set!

Enjoy with some grated parmesan on top or sliced avocado would work great as well!!
