When pumpkin season is here, I give it a go and have pumpkin in many forms... I love here the banana with it, it adds a creaminess and sweetness to it. This is a perfect fall satisfying breakfast!

Ingredients

  • 1 cup of quick cooking oats
  • 1/2 cup of pumpkin purée
  • 1 banana
  • 1/4 tsp of cinnamon
  • 1 pinch of salt
  • 1 tbsp of maple syrup
  • 2-3 tbsp of almond milk
  • Toppings: fruits and nuts

Directions

Mash half of the banana and combine with the pumpkin purée and the oats, add 3/4 cup of water, bring to a boil and simmer gently until cooked. I like my oats thick but feel free to add more water if you want it thinner. I always finish my porridge with a couple of tbsp of almond milk, it really makes a difference.

Add the cinnamon and maple syrup. Transfer to bowls and add the rest of the banana sliced, some fresh fruits and nuts for a nice crunch.
