This is the ultimate fall dessert... It is a cleaned up version of a traditional pumpkin cake but keeping all the delicious pumpkin cinnamon flavors as it should be!!!

Ingredients

  • 1 1/2 cup of wholewheat flour
  • 1/2 cup of almond flour
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 1 tbsp of pumpkin pie spice
  • 1/2 tsp of cinnamon
  • 1/4 tsp of salt
  • 4 eggs, at room temp, lightly beaten
  • 1 can of pumpkin purée
  • 1/4 cup of almond milk
  • 1/4 cup of maple syrup
  • Cream cheese frosting: 4 oz cream cheese, 2 Tbsp Greek yogurt, 1/4 cup of maple syrup, 1/2 tsp vanilla extract

Directions

Preheat the oven at 350F.

Combine all the dry ingredients in a medium bowl.

In a separate bowl, whisk together the eggs, almond milk, pumpkin purée and maple syrup until smooth.

Slowly add the dry ingredient to the wet, make sure not to over mix it and stir until just combined.

Pour the mix into an 8 by 8 greased baking sheet. Bake for 30-35 minutes until baked through or until a toothpick comes out clean.

Make the cream cheese frosting by mixing all the rest of the ingredients together until super smooth and creamy.

When the bars are cooked, leave to cool for 15-20 minutes and spread the frosting on top and cut into 12-16 pieces. Sprinkle a dash of cinnamon all over for extra flavor.
