Pumpkin bread with apple sauce

This is what happens when I have both apple sauce and pumpkin purée leftover after Thanksgiving, I find delicious ways to use them. This pumpkin bread turned out so fluffy and delicious!!!!


  • 1 3/4 cup of flour
  • 1 tsp of baking soda
  • 1 tsp of cinnamon
  • 1/4 tsp of ginger
  • 1/2 tsp of salt
  • 2 eggs
  • 1 cup of granulated organic sugar
  • 1/4 cup of olive oil
  • 1/3 cup of apple sauce
  • 8 oz of pumpkin purée


Pre heat the oven at 350F and grease and 9x5 loaf pan.Combine the flour, spices and baking soda in a large bowl and leave on the side.

Using an electric mixer, beat the eggs until fluffy, for about 3-4 minutes.add the sugar and mix fro another minute or so. add the pumpkin puree, apple sauce and oil and gently mix until smooth and combined.

Pour the wet ingredients into the dry ones and stir until just combined and there are no more specs of flour.

Transfer to the baking pan and into the oven for 50-60 minutes or until a toothpick comes out clean.

Leave to cool for 10 minutes, remove from the pan and enjoy! I think a sweetened cream cheese spread would be delicious here!
