I have to have some sweet for Halloween... I am not into candies so much anymore, but anything chocolate works for me. Adding a little pumpkin makes it seasonal and festive!

Ingredients

  • 1/4 cup of pumpkin purée
  • 1 tsp of pumpkin pie spice
  • 1 tsp of cinnamon
  • 1/2 cup and 1 tbsp of coconut oil
  • 1/2 cup of cashew butter (any smooth kind works)
  • 2 tabs-of maple syrup
  • 1 tsp of vanilla
  • 1/2 cup of chocolate chips

Directions

In a medium saucepan slowly melt 1/2 cup of coconut oil, pumpkin purée, maple syrup, nut butter, vanilla and spices. Don't put it on too high otherwise it will burn. Mix until you get a smooth consistency (a few lumps here and there of nut butter are ok).

Melt the chocolate and remaining tbsp of coconut oil.

In a small lined being dish, pour the pumpkin first and add tbsps here and there of melted chocolate. Using the tip of a knife swirl it around to create a nice pattern.

Place in the fridge for at least 2 hours or util set. Cut into 12 bit size squares and enjoy. Store it in the fridge for a couple of days or freezer for longer.
