Pumpkin spice pecan shortbread cookies

Makes 8-10 cookies

These smell and taste like the Holidays....


  • 1 cup of butter, softened
  • 1/3 cup of organic cane sugar
  • 1/3 cup of toasted pecans
  • 1 of cup of flour
  • 1 tsp of pumpkin pie spices
  • 1 tsp of vanilla extract


Preheat oven to 325 F degrees. Line 1 baking sheet with parchment paper.
In a bowl mix together butter and sugar.
Add flour, pumpkin pie spice, vanilla extract and mix till combined.
Add the chopped pecans and mix till the dough comes together.  Cling wrap the dough into a log and refrigerate for an hour.
After an hour, remove from the fridge and cut into thick slices. Remember the thinner you cut, the crispier the cookies would turn out to be.
Place all the cut cookie slices on the lined baking tray.
Bake at 325 F degrees for 20 minutes or until cookies are light golden in color from bottom.
Transfer on to a wire rack to cool completely.
