Quinoa arugula salad with sauté summer squash

Salads are my favorite thing to eat... When spring starts here, I always have tons of fresh produces and improvise southing new everyday... Is it just a question of throng it all together. Sometimes it turns out so perfect that I just feel that I need to share!
Cook the quinoa according to packaging instruction.
Meanwhile, sauté the garlic with olive oil and the squash for 3-4 minutes, until just tender (not mushy).
When quinoa is cooked toss is (while still warm) with eh cooked veggies and the arugula. Drizzle the olive oil and lemon juice and sprinkle some slat and pepper. Toss, taste and adapt seasoning!
I added on the side some chopped avocado, chickpeas, cherry tomatoes, toasted nuts and rotisserie chicken, so everyone could add on whatever the felt like!
