Quinoa 'Fried Rice" Style

We love asian flavors in our house I also always have tons of leftovers, this makes a great combo for fried rice! This time I had quinoa leftover from the day before so I thought it would be nice to try my fried rice recipe with quinoa instead and it turned out great!!

Ingredients

  • 3 cups of cooked quinoa
  • 2 carrots, chopped
  • 1 cup of frozen peas thawed (or fresh ones in season)
  • 1 tbsp of fresh grated ginger
  • 1 garlic clove, minced (or grated)
  • 3 green onions chopped
  • 2-3 tbsp of soy sauce
  • 1 tbsp of rice vinegar
  • 1 tbsp of sesame oil
  • 1 pinch of chili flakes
  • 2 eggs

Directions

Sauté the garlic, ginger, green onions and chili flakes with 2 tbsp of avocado oil for a few minutes. Add the carrots and cook  for 2-3 minutes then add the peas. When veggies soften add the cooked quinoa.

Add the soy sauce, rice vinegar and sesame oil and toss it together. Make a well in the middle of the pan and break the eggs. Cook them on low for a few minutes, then start folding in the quinoa and veggies.

Taste and see if need more of something, maybe a bit of salt and pepper and enjoy with some chicken, shrimp, tofu or beef, or even as it is!
