I guess I am posting a new salad almost everyday... Needless to say that I have a lot of time on my hands now and trying to use everything that is in my fridge since we need to stay home for now... Anyway, this way I get to come up with new salads all the time!!

Ingredients

  • 1/2 cup of quinoa
  • 1 bunch of green beans
  • 1/2 cup of cherry tomatoes, cut in 2
  • 3-4 cups of baby arugula (spinach or kale or any other leafy greens work as well)
  • 1 avocado, peeled and cut into small cubes
  • Vinaigrette: juice from 1 lemon and 2-3 tbsp of olive oil , salt and pepper
  • Optional: crumble feta, sliced toasted almonds, chickpeas, chopped fresh herbs...

Directions

Cook the quinoa according to package instructions.

Meanwhile quickly blanche the green beans (which means cook them for 2 minutes in boiling water and rinsed them right away with super cold water to stop the cooking process).

Assemble all the ingredients in a large bowl and drizzle the lemon juice and olive oil and add some salt and pepper.

Toss and add on any toppings you have at hand.
