These make a super delicious and power breakfast!! They taste even better topped with blueberry compote, fresh fruits, yogurt or even simply just maple syrup.


  • 1 cup of cooked quinoa
  • 3/4 cup of flour ( almond flour fro for gluten free version)
  • 2 tsp of baking powder
  • 1 egg and 1 egg white
  • 1 tsp of melted butter (or coconut oil)
  • 1/4 cup of almond milk ( or more if you want them thinner)
  • 2 tsp of maple syrup, plus more for serving
  • Toppings: blueberry saue, fresh berries, saut√© apples, maple syrup, coconut yogurt,....


Combine all the dry ingredients on large bowl and all the wet ones in medium size bowl. Whisk it all together until just combined.

Spoon 1/4 cup of the batter in a hot greased pan and cook fro 2-3 minutes on each side until golden brown!!

Serve with all the topping you feel like and enjoy!!
