This is the kind of dinner that my kids love. I also like making these because I can do it family style and everyone can make their own however they want it: vegetarian, chicken, tofu, steak,...

Ingredients

  • 2 bags of mane noodle
  • 4 cups of veggie stock
  • 1 tbsp of miso paste
  • 1/4 cup of soy sauce
  • 1 cup of edamame (shelled)
  • 1 cup of cabbage, shredded
  • 3 cups of baby spinach
  • choice of protein: rotisserie chicken, cooked NY steak, firm tofu

Directions

Combine the veggie broth with miso paste and soy sauce and bring to a boil. Add all the veggies and bring to a simmer fro a couple of minutes. Cook the ramen noodles according to package instructions.

Shred the chicken, thinly slice the cooked NY steak and cut the tofu into small cubes. Serve the bowls and add whatever protein you feel like. I also like adding a runny boiled egg.
