This is dinner as easy as it gets... Since I am using fresh ravioli, there is no need to pre-cook them before. I am also using good quality store bought marinara sauce and adding as much veggies as possible...


  • 2 packs of fresh ravioli (the kind you find in the fridge or frozen sections in stores, not the dried ones)
  • 1 jar of organic marinara sauce
  • 2 medium summer squash, washed and thinly sliced
  • 1 bag frozen spinach, thawed and squeezed
  • 1 cup of grated mozzarella cheese
  • 1/2 cup of grated parmesan cheese


Preheat the oven at 350F. Using a medium baking dish start laying the sauce, ravioli and veggies and repeat. Finish with the cheese on top.

Cover with foil and bake for 15-20 minutes like that. Take the foil off and finish baking it at 450F for another 10 minutes until the cheese is bubbly and golden brown!!
