Rice noodles with garlicky beef and veggies

I often make stir fry when I need a quick dinner as it is always a success with the kids!! The beauty of such a dish is that you can adapt it so easily depending on what you like or have at hand... You can make it veggies only, with beef, chicken, tofu or even shrimps. Use veggies that you have, they can be fresh or frozen.... I mean so many possibilities here!

Ingredients

  • 1/2 lb of thinly sliced beef
  • 3 garlic cloves
  • 2-3 tbsp of soy sauce
  • 1 tsp of sesame oil
  • 4 tbsp of olive oil
  • 1 pack of rice noodles
  • 1 cup of sugar snap peas
  • 1 shallot
  • 1 bag of bean sprouts
  • 1 bunch of fresh basil leaves
  • Sesame seeds

Directions

Cook the rice noodles according to packaging instructions.

Mix the soy sauce, crushed garlic, sesame oil and 2 tbsp of the olive oil with the beef. Add some salt and pepper (and a pinch of red pepper flakes if you like it spicy).

Leave to rest for 10-15 minutes ( and even longer for extra flavor. I made mine around lunch time and put it in the fridge until I was ready to cook dinner).

Heat up 1 tbsp of olive oil in a large pan and cook the beef for a couple of minutes. We like our meat medium rare, so I literally seared it for 2-3 minutes max. Transfer to a bowl. Pour the rest of  the olive oil in the pan if necessary and cook the veggies.

Add the soy sauce and sesame oil and the cooked noodles. You can either top with the beef or leave it on the side if some of the people you cook for do not like meat. I made some tofu with the same marine for my daughter that I grilled for 4-5 minutes.

Chop some fresh basil and sprinkle on top of the noodles as well as some sesame seeds! Add more soy sauce if it gets dry.
