Rice Pilaf with Cauliflower and Peas

This is a nice side dish, it is satisfying and healthy and a hit with my kids. I love mixing rice and cauliflower-rice together, the peas add a nice touch of green to it. I think kale, spinach, green beans would all work as well. Give it a try and add your favorite greens to it!
Sauté the shallot with the olive oil for a few minutes and add the garlic. When fragrant add the cauli-rice and cook for another 2-3 minutes. Add the peas, some salt and pepper and stir for 3-5 minutes. Sprinkle some chopped parsley and serve.
