Ricotta mushroom toasts

I made these the other day for a quick lunch and it was so satisfying and so easy that I thought I had to share!


  • 2-3 crackers (or toasts)
  • 2 cups of mushrooms (I used Cremini but any kind you like is good)
  • 1 tbsp of olive oil
  • 1 garlic clove, minced
  • 1 pinch of chili flakes (optional and only if you like spicy)
  • Salt and pepper
  • 1-2 tbsp of freshly chopped basil
  • 1/3 cup of fresh ricotta


Using a paper towel clean the mushroom, remove the dirt and then slice them. Do not soak them in water or they will be rubbery and not good.

In a medium pan, sauté the mushrooms with the olive oil. After 3-4 minutes when they start to wilt then you can add the garlic, some salt and pepper and keep on cooking them for 2-3 minutes.

Meanwhile toast your bread or get you crackers ready and spread some fresh ricotta. Spoon generously the mushrooms on top, sprinkle some black salt (or any kind of flavored salt) and some basil and enjoy! This is beyond good and makes me happy just writing about it!
