Roasted asparagus, mushrooms and tomatoes

Sheet pans are my favorite way to make veggies. The only thing to pay attention to is ta have veggies that have similar cooking time. Once you know do, the possibilities are infinite!!!


  • 1.5 lbs of asparagus
  • 1 pint of cherry tomatoes, cut in 2
  • 8 oz of mushrooms, sliced
  • 2 garlic cloves
  • 2 tbsp of olive oil
  • 1 lemon, juiced
  • 1 pinch of chili flakes (optional)
  • Salt and pepper to taste


Preheat the oven at 400F. line a baking sheet with parchment paper. Place all the ingredient son the sheet and toss with the olive oil chili flakes, salt and pepper until veggies are evenly coated.

Roast for 20 minutes. When cooked drizzle the lemon juice, taste ad adapt seasoning.
