The combination of flavor here is absolutely amazing! It taste better if you roast the cauliflower then just boiling it. The sweetness of the baked apples here work really nicely and give you that fall feeling kind of dish!


  • 1 head of cauliflower, washed and cut into florets
  • 2 apples, cored and chopped
  • 2 garlic cloves, peeled
  • 4-5 cups of veggie stock
  • 2 tbsp pf olive oil
  • Salt and pepper


Preheat the oven at 400F. Place the veggies and apples on a baking sheet and toss with the olive oil, some salt and pepper and roast for 25-30 minutes. When it is cooked, reserve some crispy parts of the cauliflower. Transfer to a blender with the stock and purée until smooth. Taste and adjust seasoning. Serve with the crispy cauliflower bits and some hemp seeds.
