Roasted cauliflower garlic soup

This was so easy, so delicious and exactly what I needed on a cold day for lunch... I would double the recipe if you make it for 4 people.
Preheat the oven at 415F. Wash the cauliflower and break into florets. Transfer to a baking sheet, with the garlic. Peel and chop the shallot and add to the cauliflower.
Drizzle some olive oil, some salt and pepper and roast for 30-35 minutes until cooked and a bit charred. Check after 20-25 minutes to be sure it does not burn (every oven is different). Once cooked, reserve 1-2 tsp of cauliflower to add to the soup later.
Transfer to a blender with 2-3 cups of stock and puree until smooth. Taste and adapt seasoning. Spoon into a bowl, add a drizzle of olive oil, some flaky salt and the reserved cauliflower and enjoy!
