Roasted Cauliflower Soup

Monday night dinner does not get easier than that! Simply roast the veggies and blend!


  • 2 head of cauliflower, washed and cut into florets
  • 1 onion, chopped
  • 2-3 tbsp of olive oil
  • Salt and pepper
  • 4-6 cups of veggie stock


Preheat your oven at 400F.

Place the veggies on a baking sheet and drizzle with olive oil, salt and pepper. Toss together to make sure it is all nicely coated.

Bake for 30 minutes until veggies are tender and golden brown.

Transfer to blender with the stock and purée until smooth. Taste and adjust seasoning.

You can always drizzle some pesto on top for extra flavor, or pepitas or crispy quinoa would be delicious as well!
