Serves 5-6

This is a great dish when you have guests over because you can prep it all ahead of time and just put it in oven 15 minutes before dinner!!!

  • 3 whole sea bass, cleaned and open in 2
  • 1/2 cup of fresh basil
  • 1/2 cup of fresh cilantro
  • 1/2 cup of Italian parsley
  • 1 lime, sliced
  • 3 green onions, chopped
  • 2-3 tbsp of olive oil
  • Sauce: 1 lime juiced and zested, 1/2 red hot chili pepper, 2-3 tbsp of soy sauce, 1 tbsp of fish sauce, 1/3 cup of cilantro

Preheat the oven at 400F.

Place the fish on a baking sheet and fill each of them with the fresh herbs, some lime slices and a drizzle of olive oil.

Place in the oven for 10 minutes, flipping them halfway.

Meanwhile combine the ingredients for the sauce, cutting the red pepper super finely ( and removing the seeds) and chopping the cilantro. Whisk it all and reserve for serving.

Finish the fish by broiling it for 2-3 minutes until the skin cracks open a little.

Cut them in 2 lengthwise and plate each filet on a serving dish with the sauce on the side.

Serve this with some brown rice with nori and sautéed mushrooms and asparagus and it is delicious! ( All recipes are on my blog).
