Simply Roasted Veggies

This side dish only takes a few minutes to prep the veggies and go in the oven and will leave you hands free!


  • 2 cups of Brussels sprouts, cut in half
  • 2 cups of baby carrots, cut in half lengthwise
  • 1/3 cup of chopped walnut
  • Juice from 1 lemon
  • Olive oil
  • Salt and pepper


Drizzle the veggies with olive oil and put in the oven at 400F for 20-25 minutes, tossing half way.

When the veggies are cooked, pour lemon juice on top and add walnuts some salt and pepper and serve!

I love having left overs of these and eat them for lunch the next day with a fried egg!!!
