Rosemary infused olive oil

Who knew that by simply adding some fresh rosemary to my olive oil and simmering it for a couple of minutes it would bring so much flavor to my food!! I am definitely going to explore more here and try with other herbs and spices!!
Gently simmer on low heat the rosemary with oil in a small pot. Keep it on low since we do not want to ring the temperature of the oil too much up otherwise it will alternate its structure and become unhealthy.
Simmer for 4-5 minutes and let it steep for like 30 minutes or so. What I did was remove the "cooked' rosemary and scarred it. I drained it into a small jar and added fresh rosemary back in and left it as such. This way I get different fragrances of the herb in the there!
I used it on my soup, but on roasted veggies or in salad dressings this is absolutely delicious!
