I feel like eating european food right, I miss it s much not been gable to travel freely yet. Instead I bring it to my kitchen!


  • 1 bunch of kale, stems removed and roughly chopped
  • 2 cups of arugula
  • 4 eggs
  • 1 cup of croutons (I used quinoa croutons but regular ones are great as well)
  • 4-5 anchovies filets
  • Optional: grated parmesan cheese
  • Dressing: 1 tsp of dijon, 1 tsp of vegenaise, 1 lemon juiced and zested, 1 tsp of worsershertire sauce, 1 tsp of capers, 2-3 anchovies, 3 tbsp of olive oi, salt and pepper


oil the eggs for 7 minutes, when ready rinse and peel them.

Wash and prep the lettuces and place in a bowl.

Combine all the the dressing gin gradients in a bowl and whisk until emulsified. add some salt and pepper to taste ( go easy because capers and anchovies bring a saltiness to this already).

Drizzle 3/4 of the the dressing and toss. Add the eggs, the anchovies, the croutons and drizzle some more dressing on the top! Super easy and so delicious, this feels like a day in Provence, especially with a glass of rosé>
