We had this meal almost everyday when we went to Costa Rica with all kind of fish. When we came back I decided to try and tweak my version of it with salmon and it turned out really delicious. This is as easy as it gets for a summer snack or appetizer! Serve it with plantain chips, tortillas or even on rice!


  • 1 lb of fresh salmon, skin removed and cut into small cubes
  • 1 tbsp of lemon juice
  • 1 lime, zested and juiced
  • 2 tbsp of orange juice
  • 2 green onions, finely chopped
  • 1/2 cup of edamame
  • Plantain chips
  • Cilantro and micro greens to serve


Toss the salmon with the lemon, orange and lime juice and zest and leave to rest for a couple of minutes. Add the onions and edamame and place in a serving bowl and top with fresh cilantro and micro greens. Enjoy with some plantain chips!
