Since we cannot travel safely yet, I keep on bringing my favorite places to our table.... Today is super easy greek salmon! It is sooooo good! You good do chicken if you don't like fish, it is really nice as well.

Ingredients

  • 2 small cucumber
  • 1 cup of cherry tomato
  • 1 small shallot
  • 1/2 red pepper
  • 1/3 cup of feta cheese, crumbled
  • 1/3 cup of green olives
  • 1 head of romaine
  • 2 small pieces of salmon
  • 1 /2 tsp of dried oregano
  • Salt and pepper to taste
  • 2 tbsp of avocado oil
  • Vinaigrette: 2 tsp of red wine vinegar, 1/4 cup of olive oil, salt and pepper

Directions

Season the salmon with the oregano, some salt and pepper. Cook in a pan with the avocado oil for 2-3 minutes on each side without moving it until golden brown and cooked through. Let it rest on a plate for a couple of minutes before serving.

Meabwhile wash and chop the romaine, the tomatoes, the cucumbers and the red pepper. Assemble in the plates. Thinly slice the shallot and roughly chop the olives and add to the salads alongside with the feta.

Mix together the ingredients for the vinaigrette until emulsified and drizzle on the salads.

When the salmon is cooked simply place on top of each plate and enjoy!
