Salmon pesto packets

This is the easiest way to cook fish, no mess, easy to prep, the add ons give tons of flavor, plus it does not smell like fish in the house, so it is a win win! This works for a quick weeknight dinner or is also great when I have guests over, as I can prep it all ahead of time and put it in the oven last minute....

Preheat the oven at 375F.
Place a piece of parchment paper on top of foil ( 4x4 inch should be enough). Add a couple of asparagus, a piece of fish, some salt and pepper, 1-2 tbsp of pesto sauce and a couple of cherry tomatoes. Fold the paper to form a little pack and place on a baking dish. Repeat with the remaining pieces of fish.
Place in the oven for 17-20 minutes, until fish is cooked through and flaky. That means that you could cut through with a fork. I like my salmon rare, so mine will stay for 15 minutes max...
I also like to cook extra salmon since I love it cold the best day....
