Scallion sesame pancakes

Makes 2 large pancakes

I have been wanting to make these for the longest time but could not be bothered by making the dough from scratch. So when I read somewhere that I could use pizza dough as a short cut I ran for it!

  • 1 portion of pizza dough, store bought
  • 3-4 scallions
  • 2 tbsp of sesame seeds
  • 2 tsp of sesame oil
  • Sauce: 2 tbsp of soy sauce, 1 tsp of sesame oil, 1 whole scallion, 1 tsp of fresh ginger

Flatten the pizza dough into a large rectangle (10 by 12 inch) on a floured surface. Finely chop the scallions, keep both white and green parts.

Brush it with sesame oil. Spread both the scallions and sesame seeds. Sprinkle also some salt and white pepper.
Cut it into 2 pieces, approximately 6 by 10. Roll then coil. Rest covered with a damp towel for an hour.
After an hour, flatten each coil of dough, roll out as flat as possible. Fry with some avocado oil on medium heat until both sides are golden brown (5 minutes). Then cut into quarters.

Combine the ingredients for the sauce into a small bowl add some more scallions and sesame seeds and serve.
