Sesame chicken tenders

This is a fun twist on chicken tenders and really delicious. Instead of bread crumbs, I am using almond flour and and a mxi of back and white sesame seeds.

Season the chicken with salt and pepper. Whisk the egg with a couple of tbsp of water and set aside.
Combine the almond flour and sesame seeds in a large bowl.
Taking one piece at a time dip the tenders in the egg, then almond sesame mix and transfer to a plate. Repeat with all the pieces.
Heat up the avocado oil in a large pan and cook the chicken (on medium) for 4-5 minutes on each side or until golden brown.
I would usually enjoy this with asian flavored veggies, using frozen ones. To do that simply grate some garlic and ginger in a pot and heat it up with veggie oil, add the the frozen veggies, cover and cook for a couple of minutes (depending the kind of veggies you use, it will vary). Add some soy sauce or Tamari and a bit of sesame oil.
You can also enjoy this with fried rice or sesame noodles...
