Sesame crusted salmon

The crunchy sesame seeds on the salmon mixed with the fennel apple salad create a super nice and fresh summer dish here. My kids get bored of salmon sometimes since I make it a lot (it is my favorite fish) so I try to mix it up a bit and come up with new flavors that they'll like. This is a good one and really easy to prepare as well.

Combine 2 tbsp of the olive oil, with the vinegar and mustard in a shallow dish. In another shallow dish mix the sesame seeds.
Season the salmon with salt and pepper. Dip each piece in the oil mix, then in the sesame seeds mix until nicely coated.
Heat up 2 tbsp of avocado oil in a large pan and cook the salmon on mediumĀ on each side for 2-3 minutes until the seeds get a golden color. Keep an eye on it because you don't want the seeds to get too dark otherwise it will give it a bitter taste.
While the salmon cooks, thinly slice the fennel and apple using a mandolin. Toss with remaining 2 tbsp of olive oil, lemon juice, some salt and pepper.
Arrange the fennel on a plate and add the cooked salmon on top, drizzle some balsamic glaze for a nice finish and add some cilantro leaves as well.
