Sesame soy salmon bowls with spicy mayo

I have been seeing these kind of recipe on Instagram for a while so I had to give it a try! Huge success and definitely making this again soon!

Ingredients

  • 1 lb of salmon
  • 4 cup of cooked rice
  • 1 large avocado
  • 2 small cucumbers
  • 2 cups of cooked edamame
  • 2 tbsp of soy sauce
  • 1 tsp of sesame oil
  • 1/2 cup of mayo
  • 2 tsp of sriracha sauce ( adapt depending how spicy you want it)
  • Toppings: seaweed, sesame seeds, pickled ginger

Directions

Cut the salmon into cubes and toss with 1/2 of the soy sauce and 1/2 of the sesame oil, some salt and pepper.

Heat up a pan with 1 tbsp of avocado oil and cook the salmon on each side for a couple of minutes until golden brown, I like mine rare so I stay close to it and only give it some good color on the outside.

Cut the avocado in 4 and slice each quarter. Slice the cucumbers and heat up the rice and the edamames.

Whisk together the rest of the soy sauce, sesame oil with the mayo and sriracha. Start with 1 tsp of sriracha and taste it to see how spicy you want it. I love it quite spicy but my family does not so I always make 2 versions of this.

Assemble the bowls and start with the rice (I did cauliflower rice for me) add some avocado, cucumbers, salmon, edamame and finish with sesame seeds and seaweed sheets. Drizzle some of the spicy mayo and enjoy!
