Slow cooker Indian Chicken

This recipe can be prepared in either the slow cooker or pressure cooker if you're in a rush and have limited time to cook dinner. One will take 35 mn and the other 4-5 hours


  • 6-8 chicken thighs (boneless and skinless))
  • 1 carrot, peeled and chopped
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp of grated fresh ginger
  • 2 tbsp of avocado oil
  • 1 tsp of turmeric
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 1 small sweet potato, peeled and cut in small cubes
  • 1 can of 15 oz of crushed tomatoes
  • 1/4 cup of coconut milk
  • Salt and pepper to taste
  • Cilantro and toasted cashews to serve with (optional)


Combine all the ingredients in the slow cooker and set on low for 5 hours. Add the coconut cream within the last 30 minutes. If you use an instant pot or pressure cooker, cook it for 35 minutes.

Serve with rice, naan bread, quinoa and sprinkle with the cilantro and toasted cashews.
