Slow cooker tortilla soup

Making tortilla soup in the slow cooker allows all the flavors to combine nicely. Plus it does not get any easier, you just pour everything into the crockpot set it and done!

Ingredients

  • 4 chicken thighs, skinless bone in
  • 4 cups of stock
  • 1 can of tomatoes (15oz)
  • 1 onion
  • 2 garlic
  • 1 lime, juiced and zested
  • 3 bay leaves
  • 3 cups of corn
  • 1 tsp of cumin
  • 1 bunch of cilantro
  • Tortilla Chips
  • 2 avocados, cut into small pieces
  • salt and pepper

Directions

Combine the chicken, tomato sauce, onion, garlic, sage, cumin, salt and pepper, chili flakes into the crockpot and make sure chicken is completely covered. Cook on low for 5 hours.

In the last 30 min,  remove the chicken and shred it and discard the bones. Transfer back to the pot alongside with the corn. Taste to season and add some salt and pepper accordingly.

When ready, serve into bowls and add some avocado cubes, cilantro and tortilla chips!!
