This is the kind of super easy dish that is always a success in my house. I love soba noodles, I eat them cold or hot. Sometimes I simply toss them with soy sauce sesame oil and grilled tofu... Here I added seared tuna which is my boys favorite fish!

Directions
Cook the soba noodles according to packaging instruction.
Season the tuna on both side with salt and pepper and coat the sides with sesame seeds. Cook on high for 2-3 minutes on each side ( I like mine rare so I only did 2 minutes each).
Once the noodles are cooked toss with the soy sauce, sesame oil and mirin. Julienne the cucumbers and chop the green onion and toss it all together with the edamame as well.
Once the tuna is cooked slice it and add it on top of the noodles. Slice the avocado and arrange here and there. Sprinkle some more sesame seeds and serve with the seaweed sheets.
